
Pork Chops with Apple-Shallot Sauce

4 boneless pork chops, each about ¾ inch (2 cm) thick
1 tsp salt
½ lemon
2 tbsp olive oil
Apple-Shallot Sauce
1 cup Cortland apples, unpeeled, cored and diced
1 shallot, finely chopped
1 garlic clove, finely grated
2 tbsp apple cider vinegar
1 tbsp unbleached all-purpose flour
1 cup chicken broth
1 tbsp whole-grain mustard
2 tsp honey
Pork Chops

Directions
1Pork Chops
Place the pork chops on a large plate. Sprinkle the salt over both sides. Season with pepper. Rub the pork with the cut side of the lemon half to coat well with lemon juice. Let marinate at room temperature for 15 minutes.2In a large non-stick skillet over high heat, brown the pork chops in the oil for 2 minutes on each side. Set aside on another plate.
3Apple-Shallot Sauce
In the same skillet over medium heat, soften the diced apples for 1 minute in the pork cooking fat. Add more oil as needed. Add the shallot and the garlic and continue to cook for 1 minute. Deglaze with the vinegar. Add the flour and continue to cook for 1 minute while stirring. Whisk in the chicken broth. Season with salt and pepper. Bring to a boil. Simmer for 3 minutes or until the sauce thickens. Remove from the heat.4Stir the mustard and honey into the sauce. Adjust the seasoning. Return the pork and any juices accumulated in the plate to the skillet. Coat the meat with the sauce to heat it through.
5Serve the pork chops covered with the sauce. Serve with mashed potatoes and a green vegetable, if desired.
