
Overnight Oats 4 ways

½ cup large-flake oats
¾ cup milk or non-dairy beverage of your choice (see Chef’s tips)
1 tbsp chia seeds
1 tbsp maple syrup or honey, plus more for serving
½ tsp vanilla (optional)
1 apple, unpeeled, cored and diced
½ lemon, zest finely grated and juiced
¼ tsp ground cinnamon
1 pinch ground nutmeg
Applesauce or maple butter, to taste
2 tbsp roasted pecans or almonds, chopped
2 tbsp peanut or almond butter
2 tbsp strawberry or raspberry jam
Fresh or thawed frozen strawberries, sliced, to taste
Fresh or thawed frozen raspberries, to taste
2 tbsp roasted peanuts or almonds, chopped
¼ cup pumpkin purée, or more to taste
1 ½ tbsp cocoa powder
1 tbsp tahini (optional)
½ tsp pumpkin pie spice
2 tbsp dark chocolate, chopped
2 tbsp pumpkin seeds, chopped
1 ripe banana, mashed or sliced
2 tbsp dark or milk chocolate chips
2 tbsp dried banana slices, crushed
2 tbsp walnuts or other nut of your choice, chopped
1 tbsp sweetened grated coconut

Oat Base
In a small bowl or 2-cup (500 ml) airtight container, combine all of the ingredients. Cover and refrigerate for 8 hours or overnight, just until the oats are plump and rehydrated (see Chef’s tip). Garnish the oats with the topping of your choice.2
Apple Pie Topping
When ready to serve, in a small bowl, combine the diced apple with the lemon zest, lemon juice and spices.3Vigorously mix the oats and add applesauce, to taste. Garnish with the diced apple mixture and the nuts. Drizzle with maple syrup, if desired. Serve immediately.

Peanut Butter and Jelly Topping
When ready to serve, vigorously mix the oats. Add the peanut butter and jam. Garnish with fruit and sprinkle with the nuts. Drizzle with maple syrup, if desired. Serve immediately.5
Pumpkin and Chocolate Topping
When ready to serve, vigorously mix the oats. Add the pumpkin purée, cocoa powder, tahini and pumpkin pie spice. Sprinkle with the chocolate and pumpkin seeds. Drizzle with maple syrup, if desired. Serve immediately.6
Banana Bread Topping
When ready to serve, vigorously mix the oats. Add the mashed banana. Sprinkle with the chocolate, dried banana, nuts and coconut. Drizzle with maple syrup, if desired. Serve immediately.
Tips

You can replace ¼ cup (60 ml) of the milk or non-dairy beverage with the same quantity of yogurt or coconut milk.

Overnight oats need to be soaked before consuming. During the process, the oats absorb the liquid and soften. The oat base can be prepared up to 48 hours in advance.

Overnight oats are great for using up leftover grains, fruit and nuts. Try other ripe fruit (nectarines, peaches, mangoes, etc.), or other fruit compotes and jams that you happen to have on hand. Above all, feel free to experiment with different toppings to suit your taste.
