
Grilled scallops with tequila, lime, and habanero pepper glaze

1 400 g package oz scallops
6–8 metal skewers
To taste salt and freshly ground pepper
60 mL (¼ cup) cup Sensations by Compliments Spirited Mickie Tequila, Lime, Habanero barbecue sauce
15 mL (1 tbsp) tbsp lime juice
30 mL (2 tbsp) tbsp minced chives
1 400 g package oz scallops
6–8 metal skewers

15 mL (1 tbsp) tbsp lime juice
30 mL (2 tbsp) tbsp minced chives
Directions
1Preheat barbecue to high.
2Thread two scallops horizontally onto each metal skewer. Salt and pepper.
3Place a strip of aluminum foil along front of grill to prevent skewer tips from blackening.
4Place scallops on grill with skewer tips on aluminum foil.
5Brush skewers with sauce and grill until cooked through and slightly charred, 2 or 3 minutes per side.
6Using tongs, transfer skewers to a serving dish, drizzle with lime juice, and sprinkle with chives.
7If you don’t have metal skewers, you can use wooden ones that have been soaked in water for 30 minutes.
