Directions
Arrange star fruit and kumquat slices on the sides of the popsicle moulds.
Combine the fruit juice concentrate and the yogurt. Carefully fill the moulds with yogurt while adding a few dragon fruit cubes so they are distributed throughout the popsicles.
Freeze for at least eight hours before serving.
Dive into a world of tropical freshness with these irresistible popsicles, a true burst of gourmet tropical flavour. Creamy plain yogurt blends perfectly with sweet, fragrant fruit juice, creating a sublime taste experience. Thin slices of starfruit and kumquat add a tangy, refreshing touch, while small cubes of pitahaya, a true gem of the tropics, add a crunchy touch. Each bite is an invitation to a sensory getaway that will awaken your taste buds and whisk you away to the tropics. Let these frozen wonders seduce you as you give in to the temptation of a gourmet, refreshing break, full of colour and exquisite flavour.
For an added touch of elegance, arrange the fruit slices symmetrically on the sides of the popsicle moulds.
Experiment with other tropical fruits based on what’s in season and your preferences. Mango, passion fruit and pineapple are all delicious alternatives.
Make sure to mix the fruit juice concentrate and yogurt until completely smooth. This ensures an equal distribution of flavour in each popsicle.
To unmould the popsicles, run the mould under warm water for a few seconds. The popsicles will then come out more smoothly, all in one piece.
Allow enough time for the popsicles to set properly in the freezer. Patience is key to achieving the perfect texture and hassle-free unmoulding.
