1 can AYLMER® Whole Tomatoes with Herbs & Spices
1 bottle ginger beer
½ cup brown sugar
2 tsp chopped garlic
2 tsp Dijon mustard
2 lb boneless pork roast (such as butt, picnic or shoulder)

Directions
1Preheat oven to 325°F (160°C). Chop tomatoes; combine tomatoes, ginger beer, sugar, garlic and mustard. Place roast in roasting pan; pour tomato mixture over top. Cover with foil.
2Bake for about 3 hours or until pork is very tender. Carefully transfer pork to cutting board. Using two forks, shred pork (discard any large pieces of fat).
3Meanwhile, pour cooking sauce into small saucepan set over medium-high heat; bring to boil. Reduce heat; simmer for 10 to 15 minutes or until thickened. Toss with shredded pork.
