
Bacon, leek & cheese tartines

1 package F. Ménard sliced bacon, diced
500 mL (2 cups) cup leeks, white part only
120 g (about 125 mL ½ cup) cup cream cheese, softened
100 g (about 1 cup) cup sharp cheddar, shredded
75 mL (⅓ cup) cup chopped fresh parsley
To taste freshly ground pepper
8 slices Au Pain Doré country-style loaf

Directions
1Place oven rack in middle position and preheat oven to broil.
2Fry bacon in a non-stick skillet over medium-high heat for 3 to 5 minutes. Add chopped leeks and continue cooking for 1 minute. Remove from heat and let cool for 5 minutes.
3Add cheeses, parsley, and pepper. Mix well to combine.
4Arrange bread slices on a parchment-lined baking sheet. Divide bacon mixture evenly onto bread slices.
5Broil for 5 to 7 minutes or until golden.
6Serve as a cocktail, a side for brunch or breakfast, or with a delicious soup.
