The story of Les Charcutiers Pork Shop starts with Frédéric Daoust and Tommy Gosselin. In a fortunate twist of fate, the two ITHQ alumni met in 2012 while working at the same Montreal restaurant. In 2013, they quit their jobs and founded Les Charcutiers Pork Shop.

Tips and tricks for serving your charcuterie Hosting a get-together? Elevate your charcuterie game by putting together a pretty and practical platter! Make sure to space everything so as to avoid flavours bleeding together, and so that your guests can easily pick and choose what they feel like sampling. The ideal serving temperature for charcuterie is between 14 and 18 degrees Celsius, if everything remains at room temperature. If you plan on storing your platter in the fridge, make sure to place it on the lower shelf. Remove from the fridge an hour prior to serving, to enable the flavours to fully develop.

Tips and tricks for serving meat pies To reheat your pies, simply cover them with aluminum foil and place them in the oven at 180 ° C (350 °F) for 45 minutes. For a quick and easy homemade fruit ketchup, place 30 ml (2 tbsp.) of pickling spices in a tea steeper and plunge into a large pot filled with approximately 12 tomatoes, 6 apples, 3 onions, and 1 red pepper, all chopped. Add 250 ml (1 cup) of white vinegar, 625 ml (2 ½ cups) of sugar, and a pinch of salt. Bring to a boil and let simmer on medium heat for 1 hour. Enjoy!
