How to make a yule log

The traditional yule log is a quick and easy-to-make Christmas dessert, with its rolled cake that can be filled in a thousand and one ways. Before you jump into a recipe though, discover the essential basics to make this holiday classic a success.

1. Choose the type of cake

 For a perfect yule log, the cake should be flat, pliable and easy to roll—sponge cake is ideal.

This light and fluffy cake is made from whole eggs whipped to a ribbon, a technique that involves whisking the eggs with the sugar until they triple in size. This results in an airy texture where a thick ribbon falls from the whisk, forming furrows in the dough. This method allows a lot of air to be incorporated into the mixture, which helps the cake rise evenly during baking and ensures a fine and delicate crumb.

As for the log, the dough is baked on a baking sheet to obtain a thin and flexible cake, ideal for rolling.

2. Making your own roll cake: Two methods

This question often comes up: Should you roll the log when it’s hot or cold?

Hot cake: The cake is more flexible and easy to roll. As it cools, it will take its shape. On the other hand, it may crumble more when unrolling it to garnish. Luckily, a generous frosting is enough to hide small imperfections.

Cooled cake: The cake can be rolled at room temperature, but it is then advisable to let it cool in the baking tray by covering it with a dry cloth. This helps retain moisture and makes it easier to roll.

3. Add the toppings

The yule log can be filled according to your tastes and desires. We like to create a contrast of flavours between the filling inside the log and the icing on the outside.
