Cooking During Maple Season: Fresh Ideas Beyond Sugar Pie

This article was created by Earth Day for program Food Fight by IGA

Featured this week: a must-have ingredient in our Quebec pantries and fridges—maple syrup! Here, we explore the full potential of this often underestimated ingredient.

How to Enjoy It All Year Long

When it comes to storage, nothing could be simpler. Before opening: keep it in the pantry. After opening: store it in the fridge. It will keep for 6 months to a year when refrigerated. If it becomes slightly grainy over time, don’t panic! It’s completely normal—once opened, a bit of water evaporates, the sugar crystallizes… and there you go. A light warming is enough to restore its original texture.

Good to know: even though it can be stored for several years in the pantry before opening, maple syrup also freezes very well. Handy if you stock up during sugaring season or have leftovers in the fridge. A winning tip: freeze it in small, ready-to-use portions.

To Add to the Menu Every Day (or Almost!)

We love it on pancakes… but let’s be honest, it has so much more to offer. Maple syrup is actually an excellent substitute for other sugars used in cooking, and on top of being delicious, you support a proudly local product!

In recipes, it can easily replace honey, white sugar, or brown sugar. For the last two, the rule is simple:

1 cup of sugar ≈ ¾ cup of maple syrup.

It will add great “oomph” to your favorite muffins!

With maple syrup, just a drizzle elevates everything: salads, roasted vegetables, marinades, yogurt… It’s perfect for glazing vegetables or salmon (a drizzle at the end of cooking), sweetening your morning coffee, or jazzing up a simple sauce or vinaigrette.

And why not add a splash to your carrot soup, goat cheese pizza, or charcuterie and cheese board with nuts? Sometimes, all it takes is the idea.

Here are a few simple ideas for your next culinary creations:

  • Marinade: male + soy + garlic + ginger

A timeless classic for your favorite protein.

  • Vinaigrette: maple + oil + balsamic or cider vinegar + mustard

  • Roasted vegetables: maple + olive oil + thyme or rosemary

  • Quick compote or jam: apples, pears, or berries + maple + spices

  • Homemade mayonnaise: mayo + maple + lemon juice + spices or herbs of your choice

And that’s not even mentioning cocktails and mocktails, morning smoothies, or homemade dips that instantly gain character with a touch of maple!
In short, maple syrup deserves to break free from its season—and its bottle. A little drizzle, a bit of boldness… and the magic works, all year long.
