For rushed (or uninspired) mornings, make ahead breakfast burritos are a true lifesaver.

Cook some rice ahead of time, then mix it in a pan with black beans, bell peppers, tomatoes, cheese, eggs, and salsa. Store the mixture in the fridge and, when it’s time for breakfast, simply reheat it in the microwave.

Add it to a tortilla with your favorite sauce (for me: Greek yogurt and hot sauce), roll it up… and off you go to the office!

These wraps can also be frozen.

The concept is simple:

one base (rice, quinoa, couscous), roasted/sautéed/raw vegetables, a protein, and a good sauce.

By preparing 1–2 bases and 1–2 proteins, you ensure plenty of combinations to keep your lunches interesting throughout the week.

Quick ideas:

  • Rice + corn + bell peppers + beef + salsa
  • Quinoa + black beans + red cabbage + marinated tofu + lime
  • Couscous + grilled vegetables + pulled pork + sour cream


It’s colorful, nourishing, and easy to prep while you listen to your favorite Latin playlist.

My tip: I like adding a big spoonful of sour cream or Greek yogurt, fresh cilantro, and a lime wedge to each bowl to elevate the flavors.

“Touski” Quesadillas: The Art of Emptying Your Fridge

A quesadilla is basically the Mexican version of the Québécois “touski” (“tout ce qui reste”—whatever’s left).

My favorite version?

A mixture of mashed legumes (directly in the pan using a potato masher), leftover vegetables, and cheese. Heat everything together, then add your favorite spices—mine are cumin, paprika, chili powder, and garlic salt.

Once the mixture is ready, spread it over half of a large tortilla, fold it over, and grill it on both sides in the pan.

Serve with salsa, sour cream, and — if you’re feeling festive — homemade guacamole!
