Appetizers Recipe #1

Baked Brie in Phyllo

1/4 cup Butter, melted 50 mL
2 sheets Phyllo Pastry 2 Sheets
1 Brie or Camembert Cheese 200 g
1/4 cup Compliments Chopped Walnuts 50 mL
1/3 cup Compliments 15% Real Maple Syrup 75 mL

Directions:

Lightly brush one Phyllo Sheet with melted butter. Fold left half over. Lightly brush surface again and fold top half over. Lightly brush surface again. Repeat process with second phyllo sheet. Place folded sheets on top each of other to form a star. Place Compliments Brie or Camembert Cheese in center and pull phyllo sheets up to form a ruffled cup around cheese. Bake on a lightly greased baking sheet in a 375 F (190C) for 15 minutes or until pastry is lightly browned. Place on serving dish and top with Compliments Chopped Walnuts and 15% Real Maple Syrup.

Suggestion: Serve with Compliments Crackers

Salmon Roll Ups

1/4 cup Cream Cheese 50 mL
4 Tortilla Wraps 4
2 pkgs Compliments Smoked Salmon 170 g
8 spears Asparagus 8 spears

Directions:

Spread 1 tbsp (15mL) of cream cheese evenly over 1 Tortilla Wrap. Place1/2 package of compliments Smoked Salmon over the cream cheese. Place 2 spears of asparagus (end to end) at the base of the tortilla and roll inwards to make a tube. Slice at angle into 1” rolls.

Mexican Salsa Dip

1 cup Compliments Roadhouse Salsa, mild, medium or hot 250 mL
1 cup Sour Cream 250 mL

Directions:

In a medium size bowl, mix together Compliments Roadhouse Salsa with sour cream.

Punch

2 Bottle Compliments Cranberry Raspberry Cocktail 3.78 L
1/2 Bottle Compliments Ginger Ale 1 L
2 cups Strawberries, halved 500 mL
2 cups Bananas, sliced 500 mL
2 cups Apples, cored, cubed 500 mL

Directions:

In a large punch bowl, mix together all ingredients. Refrigerate for at least 2 hours before serving.

Mulled Cranberry Punch

1 bottle Compliments Cranberry Cocktail 1.89 L
1 cup Frozen Cranberries 250 mL
1 Cinnamon Stick 1
4 Whole Cloves 4
2/3 cup Sugar 150 mL
1 Small orange, sliced 1

Directions:

In a medium size pot, simmer Compliments Cranberry cocktails. Frozen Cranberries, cinnamon stick, cloves and sugar for 25 minutes. Add orange sliced and serve.

Total Prep/Cook Time: 30 minutes
Serves: 6 (approx 1 cup serving)

Sparkling Lemon Float

3 cups Compliments Vanilla Ice Cream 750 mL
36 fl oz. Compliments Sparkling Lemonade 1.1 L
Fruit for garnish

Directions:

For each serving, place 2 scoops Compliments Vanilla Thrill Ice Cream into a 12 fl oz (375 mL) glass. Pour in 6 fl oz (175 mL) of Compliments Sparkling Lemonade. Garnish with fruit.

Apple Cider

8 cups Our Compliments Premium Apple Juice 1.89 L
1 Whole Clove 1
1 Cinnamon, Stick 1
1 Lemon Slice 1
1 tbsp Nutmeg 15 mL
1/2 cup Blueberries 125 mL
1/2 cup Strawberries, hulled & washed 125 mL
1 cup Orange segments 250 mL

Directions:

In a large saucepan, bring Our Compliments Premium Apple Juice to a boil. Reduce to a simmer and add clove, cinnamon stick and lemon slice. Simmer for 25 minutes, skimming any foam that appears.
Add blueberries, strawberries and oranges for the last 10 minutes of simmering. Sprinkle each glass of cider with nutmeg.

Total Prep/Cook Time: 30 minutes
Makes: 6 –1 cup servings.

Desserts

Blueberry Pie

1 Pkg Compliments Frozen Blueberries, 600 g
thawed and drained
2 Tbsp Cornstarch 25 mL
1/2 Cup Sugar 125 mL
2 Compliments Regular Pie Shells 2

Directions:

In a medium size bowl, mix together Compliments Frozen Blueberries cornstarch and sugar. Follow Compliments Regular Pie Shell instructions to make a 2 crust pie. Serve with Compliments Vanilla Ice Cream.

Blueberry Crumble Tarts

1 Pkg Compliments Frozen Blueberries, 600 g
thawed and drained
2 Tbsp Cornstarch 25 mL
1/2 Cup Sugar 125 mL
1 Pkg Compliments 3” Tart Shells 255 g
1/4 Cup Brown Sugar 50 mL
1/4 Cup All-Purpose Flour 50 mL
1/4 Cup Rolled Oats 50 mL
2 Tbsp Chilled Butter 50 mL

Directions:

Mix together Compliments Frozen Blueberries, cornstarch, and sugar. Spoon into Compliments 3” tart Shells. Combine brown sugar, flour, oats and butter in a medium size bowl to form a course crumble. Sprinkle over blueberries. Place tarts on a baking sheet and bake on bottom rack of a preheated 375F (190C) oven for 15-20 minutes or until pastry and topping are golden brown.

Total Prep/Cook Time: 45 min.

Bread Pudding

2 tsp Butter, melted 10 mL
8 Slices Thick Sliced Cinnamon
Raisin Bread, 1” cubes 8 Slices
3 cups Light Egg nog 750 mL
4 Eggs, Whole 4
2 Egg yolks 2
1 cup Brown Sugar 250 mL

Directions:

Brush an 8” cake pan or an 8-cup casserole dish with butter. Place cubed Thick Sliced Cinnamon Raisin Bread into cake pan. In a large bowl, beat eggs with all but 2 tbsp (25 mL) of the brown sugar for 2 to 3 minutes. In a medium size pot, bring Light Egg Nog to a boil, then mix into the beaten egg mixture, a little at a time. Pour entire mixture over cubed bread making sure to soak each piece. Sprinkle with remaining brown sugar and allow to sit for 15 minutes. Place in preheated 325 F (160C) oven for 40-50 minutes or until an inserted knife comes out clean. Serves 6-8

Graham Crust Cheesecake

1 cup Smart Choice Honey Graham Crackers 250 mL
crushed (about 8 crackers)
2 tbsp brown Sugar, packed 25 mL
1/4 cup Margarine or butter, melted 50 mL
1 cup Cream Cheese 250 g
1/2 cup Sour Cream 125 mL
1/2 cup Sugar 125 mL
2 Eggs, beaten 2
1 tbsp Lemon Juice 15 mL
1 tsp Cinnamon 5 mL

Directions:

In a medium size bowl, combine Smart Choice Honey Graham Cracker crumbs, brown sugar and margarine or butter. Press onto bottom and sided of 9” (22 cm) pie plate.
In a large bowl, mix together cream cheese, sour cream, sugar, eggs and lemon juice. Pour cream cheese mixture into prepared crust. Place in a preheated 325F (160C) oven for 50 minutes or until firm. Allow pie to cool completely then evenly sprinkle with cinnamon. Refrigerate until ready to serve.

Total Prep/Cook Time: 1 hour + 45 minute cool time
Makes: 8 servings

Peanuts Butter Rice Squares

1 C Compliments Light Peanut Butter 250 mL
3/4 C Corn Syrup 175 mL
1/2 C Brown Sugar 125 mL
1 tsp Vanilla Extract 5 mL
3 cups Compliments Golden Crispy Rice Cereal 750 mL
Compliments Non-Stick Cooking Spray

Directions:

In a medium saucepan, combine Compliments Light Peanut Butter, corn syrup, brown sugar and vanilla extract. Place on low heat and stir until melted. Remove from heat and mix in Compliments Golden Crispy Rice Cereal. Spray a 9” x 9” (23x23cm) pan lightly with Compliments Non-Stick Cooking Spray. Spoon mixture into pan and press lightly. Chill for 1 hour in refrigerator before cutting. Makes approximately 25 squares.

Optional: Melted chocolate can be drizzled over top.

SKILLET CHICKEN DIVAN

1 tbsp Butter 15ml
2 Boneless, skinless chicken breasts, sliced 250g

DIRECTIONS:

• Heat butter in a medium size saucepan.
• Add chicken and sauté for 5 to 7 minutes over medium
heat until browned
• Stir in OUR COMPLIMENTS CHICKEN & BROCCOLI RICE
SIDE DISH and water
• Cover and simmer for 10 minutes
• Stir in cauliflower and broccoli, cover and simmer for
another 5 minutes or until rice is cooked
• Remove from heat

MOZZARELLA CHEESE over top of rice

DIRECTIONS:

MARINADE:

In a medium size bowl gradually whisk the OUR COMPLIMENTS AUTHENTICO EXTRA VIRGIN OLIVE OIL into the OUR COMPLIMENTS AUTHENTICO BALSAMIC VINEGAR and add the garlic

Place the 6 Filet Mignons and the 6 mushroom caps into a shallow pan
• Pour marinade over meat so that they are evenly coated
• Marinate for 3 hours
• Grill the steaks and the mushrooms for 2 minutes per side
• Turn down the heat to medium and cook 2 minutes per side
until steaks are close to done (about 8 minutes)
• Top each steak with 15g of COMPLIMENTS BRIE CHEESE and
place 1 mushroom cap on top of each steak
• Cook until cheese melts ~ about 2 minutes

OLIVE OIL

1 tbsp Garlic, chopped 15ml
6 Filet Mignons 6

6 Mushroom caps 6

DIRECTIONS:

MARINADE:

In a medium size bowl gradually whisk the OUR COMPLIMENTS AUTHENTICO EXTRA VIRGIN OLIVE OIL into the OUR COMPLIMENTS AUTHENTICO BALSAMIC VINEGAR and add the garlic

Place the 6 Filet Mignons and the 6 mushroom caps into a shallow pan

Pour marinade over meat so that they are evenly coated

Marinate for 3 hours


• Grill the steaks and the mushrooms for 2 minutes per side
• Turn down the heat to medium and cook 2 minutes per side
until steaks are close to done (about 8 minutes)
• Top each steak with 15g of COMPLIMENTS BRIE CHEESE and
place 1 mushroom cap on top of each steak
• Cook until cheese melts ~ about 2 minutes

DIRECTIONS:

• Bake COMPLIMENTS DEEP DISH PIE SHELL according to
package directions
• In a medium size bowl, beat eggs
• Mix in salt, pepper and table cream
• Sprinkle COMPLIMENTS SUGARBUSH AHM and Gruyere Cheese
into pie shell
• Pour egg mixture over ham and cheese
• Bake on bottom rack of a preheated 350oF (180oC) oven for
30 minutes

Directions:

In a medium size saucepan, heat oil and sauté celery, onion and Compliments Mild Italian Sausage for 7 minutes or until celery and onion have softened. Fill turkey cavity with stuffing and cook according to instructions on turkey wrapper.

8-10 Medium Cooked & cooled Red Potatoes 750 g
1/2 Pkg Compliments Bacon, chopped 250 g
6 cups Chopped romaine lettuce (approximately 1 head) 1.5 L

Directions:

Cook Compliments Naturally Smoked Bacon according to package directions. Cut potatoes in half. In a large bowl, combine all ingredients. Serve.

Directions:

Heat butter in a large pot. Add carrots, celery and onion. Saute for 3 to 5 minutes.

Add condensed chicken broth, water, red kidney beans and Our Compliments Sundried Tomato & Herb Pasta Side Dish. Bring to a boil. Reduce heat and simmer for 7 minutes. Sprinkle with Our Compliments 100% Authentico Grated Parmesan Cheese. Serve.

Mushroom Wild Rice Soup

1 tbsp Butter 15 mL
2 cups Sliced Mushrooms 500 mL
4 cups Water 1 L
1 pkg Our Compliments Mushroom Wild Rice Side Dish 1 pkg
1 cup Diced Smoked turkey 250 mL
Salt to taste

Directions:
